Cultural Video and Food Demo

This project is intended to further your food and cultural knowledge of a culture or nation, including an understanding of the historical and cultural developments that led to the diet of a specific culture.

Content

Use at least 2 additional scientific research-based resources (journal articles or books).

Information to thoroughly cover:

  •  Cultural perspective of the ethnic group o Location and relevant history
    o Religion and family structure
    o Traditional health practices
  •  Traditional food habits
    o Ingredients and common foods
    o Meal composition and cycles
    o Role of food in society and special occasions o Therapeutic uses of food
  •  Contemporary food habits in the US
    o Adaptation of food habits
    o Nutritional status
    o Influence of the group on the US diet Guidelines

 Create a video presentation to be submitted via WebCampus that addresses each of the content areas. (I will be the only one viewing this video). The video may be a PowerPoint with you talking over it, or it may be an actual video of you demonstrating the recipe (recipe may already be prepared to save time in your video, but go through the steps used) and talking about the culture that dish comes from,which should include the points listed above. Students have used Windows Movie Maker, videos shot on their smartphones in the past. Whichever method you choose, the key is to have AUDIO in order to fulfill the oral presentation portion of this course. Do not simply submit a standard PowerPoint presentation.

  •  Your video should be 7-10 minutes in length.
  •  Creative and sensory appeal is encouraged in the video(cooking utensils, samples of music from the area, spices used in traditional recipes).
  •  As part of the presentation you are asked to select at least 1 recipe that includes a traditional food item and prepare it.
  •  Provide to your instructor: 1) Cultural Video and 2) Full recipe (including ingredients) that was used to prepare the meal in MS Word. Upload both items to WebCampus as attachments (or the YouTube link and recipe as an MS Word file). Evaluation The project is worth a total of 100 points (see posted grading rubric). PLEASE REVIEW THE GRADING RUBRIC EARLY SO YOU UNDERSTAND WHAT IS EXPECTED.
